Warm up with our vegan pumpkin spice chai latte
As the weather gets colder, we get giddy for big comfy sweaters, lazy evenings curled up on the couch and long soaks in the tub after Pilates. And to make our days and nights even cozier? A vegan pumpkin spice chai latte, of course!
Before you start, you’ll need a few things:
- 4 oz water
- 2 organic chai tea bags
- 1 cup unsweetened coconut milk
- 1 ½ tbsp maple syrup (or to taste)
- ¼ tsp vanilla extract
- ¼ cup pumpkin purée (canned or fresh)
- ¼ tsp pumpkin pie spice (or to taste)
- A cup or mug
- A standing or hand blender
Step 1
Fill a kettle or pot with water and set to boil. (You can measure the 4 oz you’ll need after it’s boiled, since 4 oz isn’t much water to boil.)
Step 2
Place your two tea bags into the cup or mug. Measure out your 4oz of water and pour into the cup. Let steep for 5-7 minutes.
Step 3
Carefully remove the tea bags, squeezing them to get the most flavor out of them. Remember, the water and tea bags will still be pretty hot, so be super careful when handling them.
Step 4
Grab your blender and pour your tea into the jar. Add the remaining ingredients into the jar. Blend for 2 minutes; there should be a fine froth on top.
Step 5
Using a spoon, give your latte a taste. Adjust the maple syrup and spices to your liking. If you’re happy, you’re good to go. And if it’s not hot enough, simply pour it back into a pot and heat over medium until it’s steaming but not boiling.
Step 6
Pour your vegan, café-style pumpkin spice latte into your favorite mug. Add any toppings you like, including a vegan whipped cream for the ultimate indulgence. Then, grab a seat on the couch, put your feet up and smile, because the best things in life really are free…and pumpkin-y.
